Anne-Sophie, has grown up in the North of France, and is happy to share with you her recipe of the Carbonade Flamande. Please note, that for this speciality the ingredients are left to simmer together for at least 3 hours at low heat.
✅ The Carbonade Flamande - Needs 3 hours at low heat.
👉 1,2 kg morceaux de bœuf - beef in pieces
👉 Beurre ou saindoux - butter or pork fat
👉 3 oignons - Onions
👉 3 cuillères soupe de vergeoise brune - like brown sugar
👉 1 cuillère à soupe de vinaigre - vinegar
👉 Bière blonde des 3 Monts - or any amber beer
👉 Sel et poivre - Salt and Pepper
👉 1 bouquet garni - You can buy already made with parsley, thyme, and bay leaf
✔️ Start to brown the beef with the butter/saindoux in a pan
✔️ When done, remove from the pan.
✔️ In the pan, onions and vergeoise.
✔️ When onions are partly cooked, add the vinegar.
✔️ Add the beef
✔️ Add the beer (cover the beef with beer)
✔️ Add the bouquet garni
✔️ Live 3 hours at low heat.

Your holidays in France this summer
Prime Minister Edouard Philippe announced today, that we will be able to go on holidays in July and August, despite the Pandemic, whether to the mainland or in the overseas departments.
However, this will be possible only if a second wave of the pandemic doesn't occur.
The government got the engagement from the tourism sector that we will be fully refunded in the event of a cancellation linked to the Covid. (However, we would recommend to check when booking !!).
What will your choice be ? Remember, if you need some ideas, you can look at our posts regarding the French Regions. Already 5 regions have been posted : Auvergne-Rhône-Alpes, Bourgogne-Franche-Comté, Bretagne, Centre Val de Loire, Corsica.

National and International travel restrictions for the period May 11th-June 2nd
In the context of the covid-19 pandemic
Since May 11th, rules have been softened.
A new period -May 11th to June 2nd- has started, hence new travel rules depending on if you wish to travel within France or Internationally.

Given the health context, the period of validity of residence permits held by foreign nationals is exceptionally extended by 6 months. How will France reopen ? Deconfinement Day - May 11th
The Deconfinement Day will take place on May 11th, Prime Minister Edouard Philippe confirmed yesterday May 7th, in front of the Assemblée Nationale.
It is a gradual process that will begin over the course of several weeks at least.
4 regions have been designated red zones. Red zones are where the infection remains high. In the red zones the rules which will be stricter.
